Via’s Homemade Guacamole

Ingredients
  • 2 avocados
  • 1 lime
  • 1/4 tsp sea salt
  • 2 sprays simply beyond cilantro
  • 2 prays simply beyond garlic
  • 1/4 red onion
Directions

Peel & core avocados
Dice red onion
Add both into a bowl
Top with sea salt
Juice lime over avocados
Spray garlic & cilantro spray
Mix together and mash down
*you may want to cut guacamole into cubes to make this easier
Add 1 oz water for a creamier guacamole

Eat as is or store in refrigerator in an air tight container with pit of 1 avocado to avoid oxidation

organic pomegranate vinegar salad

Via’s Pomegranate Salad

Ingredients
  • 8 oz Spring mix salad
  • 6 strawberries
  • ½ cucumber diced
  • ½ yellow pepper, diced
  • ¼ cup pumpkin seeds OR nut / dry fruit trail mix
  • 1 tsp olive oil
  • 2 generous sprays Simply Beyond pomegranate vinegarette
  • Dash sea salt
Directions

Place salad in a bowl Cut all strawberries into quarters Add strawberries, pepper, cucumber and pumpkin seeds / trail mix Add olive oil and sea salt Spray with pomegranate dressing Toss all ingredients together

Serves 2

Add chicken, salmon, avocado or hard boiled eggs for extra protein and satiation!

PUMPKIN PROTEIN SMOOTHIE

Via’s Pumpkin Protein Smoothie

Ingredients
Serves 1
  • 1/2 cup canned pumpkin
  • 1/2 frozen banana
  • 1 serving amazing grass vanilla vegan protein powder
  • 1/2 cup vanilla coconut or almond milk
  • 2 quick sprays pumpkin spice
  • 1 quick spray cinnamon
  • Dash sea salt
  • 1 tsp flax
  • 1/2 cup ice
  • 1/4 cup water
Directions

Add all ingredients into a blender
Mix until smoothe

Drink & enjoy!
CILANTRO CORN SALSA QUINOA

Via’s Cilantro Corn Salsa Salad w/ Quinoa

Ingredients
  • 2 cups organic corn, cooked (about 4 cobs or 1 can)
  • 1 can black beans
  • 1 cup de-seeded and chopped tomatoes
  • 1whole cucumber, diced
  • 1 red bell pepper, diced
  • 3-4 sprays Simply Beyond Cilantro
  • 2 light sprays Simply Beyond Garlic
  • ¼ red onion, diced
  • 1 fresh lime, juiced
  • 1/4 tsp Sea salt for flavouring
Salsa Directions

Mix all the ingredients together in a large platter or bowl.

Quinoa Ingredients
  • 1 ½ cups quinoa
  • 3 cups water
  • 1 tbl sp chicken or vegetable boullion
Quinoa Directions
  • Boil water
  • Add quinoa and boullion
  • Stir then bring back to a boil
  • Reduce heat to simmer, and cover
  • Cook 15-20 minutes
  • Remove from heat and add to corn salsa

Place in the fridge to let the flavors mix for about 1 hour before serving

Via’s Garlic Cilantro Hummus

Ingredients
  • 1 can chickpeas
  • 6 sprays Simply Beyond Garlic
  • 4 sprays Simply Beyond Cilantro
  • 1 tsp sea salt (or add more for personal taste) 1 lemon, juiced
  • 1/2 cup water
  • 1/3 cup tahini
  • Dash paprika
Directions

Add all into a blender and mix until smooth Top with paprika & enjoy with your favorite veggie stick or cracker
